Strawberry cream cheese cupcake

It’s a weekend baking time and I’m loving this strawberry cupcake with the cream cheese frosting. I got the recipe online and excited to share it here:

Cupcake ingredients (will make 12-15 regular cupcake):

dry ingredients:

2 1/3 cups plain flour
1/2 teaspoon salt
2 1/2 teaspoons baking powder

wet ingredients:

1 cup butter, softened
1 cups caster sugar
3 eggs
1 teaspoon vanilla
2/3 cup milk



strawberry jam
cream cheese, roll into small cubes (to be inserted inside the cupcake)
Fresh strawberries  and sprinkles (for decoration)


Frosting ingredients:

 8 oz cream cheese, softened
1/4 cup butter, softened
2 1/2 cups icing sugar
1 teaspoon vanilla
2 teaspoons milk

To make:

1. Beat the butter in a mixing bowl, add sugar, eggs and vanilla altogether for approx. 2 mins
2. In a separate bowl, mix the flour, salt and baking powder
3. Mix the dry and wet ingredients together with milk and slowly stir for probably 30 seconds.
4. Preheat oven at 175 °C and begin lining up your papercup into the cupcake mold/baking pan.
5. Pour the batter into the mold about half of the cup. This is the part where you add the strawberry jam and the cream cheese. Scoop about 1 teaspoon jam and also insert the cream cheese cube. After that, pour the batter to cover the fillings.
6. Bake for 25 mins and put aside once done, let it chill to room temperature and start to make the cream cheese frosting.
7. Mix all the ingredients for the frosting. Beat for 1 min. Pour the mix inside a frosting gun and begin to decorate the cupcake.
8. Add some sprinkle and fresh cut strawberries to decorate.
